Over the past few years, the Auberge des Gallant has undergone a major evolution, both in terms of architecture and in the addition of services offered on site. Even the renowned sommelier’s menu is designed with the sole intention of satisfying epicureans and lovers of fine wines.

Chef Elouan Riaud

My name is Elouan Riaud, I am 21 years old, and I have been passionate about cooking for 6 years now. I was born in France, in the town of l’Oie, located in the Vendée department in the Pays de la Loire region. This is where I began my career as a chef. I acquired my skills through a training program that started with an apprenticeship for a CAP certification over 2 years, followed by a Professional Certificate, also completed through apprenticeship. To refine my pastry techniques, I then completed my studies with an additional certification in restaurant desserts.

Before joining Auberge des Gallants in Quebec in January 2023, I had the privilege of working in a semi-gastronomic restaurant in France. My choice to settle in Canada stems from my attraction to its magnificent landscapes and my admiration for the country’s love for high-quality gastronomy. Working with fresh, local products was a significant factor that strengthened my decision to continue my career here.


Chef Diego Kipper Schmidt

Diego embarked on his culinary journey during his teenage years, starting out in the family business. With an insatiable appetite for learning, he diligently pursued various culinary courses, immersing himself in diverse cuisines. His culinary adventures in the southern region of Brazil encompassed a wide range of establishments, from hotels to wineries, cultivating a profound affinity for Italian cuisine. It was in this realm that he honed his expertise to an even greater degree. In January 2023, Diego made a direct transition to the kitchen of Auberge des Gallant upon arriving in Quebec.


Vignoble de Pomone

It was in 2009 that Sylvain planted his first vines.

He had secretly cherished this dream since his forties. He studied viticulture and surrounded himself with experts and made many new winegrower friends. In 2010, he built his own house, in 2013, the winery. During these constructions, he planted vines every year. The grape harvests were sold to several Quebec vineyards. Little by little, through hard work, passion and perseverance, the Vignoble de Pomone, in July 2019, began to sell its quality wines prized by the greatest restaurants and consumers.

Située à 45 minutes de Montréal, Le Vignoble de Pomone offre de vins de haut de gamme ainsi qu’une expérience vini-viticole hors du commun.

Le Vignoble possède 12 hectares de vignes composé de 28 variétés de cépages différents, autant des vitis-vinifera que des cépages hybrides, adaptés à notre climat froid.

Le Vignoble est parmi les plus grand vignoble du Québec avec une production présentement de 60 000 bouteilles par an, toujours en croissance.  Plus de 13 produits sont disponibles à différents moments de l’année. Des blancs, des rouges, un rosé, des oranges, un gris, un vin fortifié, un vin de paille, un vermouth et une piquette.  Nos vins sont souvent primés, en mai 2023, le UNI Réserve 2021 à gagné au concours de La Coupe des Nation, les médailles Grand Or et le prix distinction qui en fait le meilleur vin du Québec. Le SENS Réserve 2023, tant qu’à lui, à remporter la médaille d’or!

Le Vignoble produit ses raisins dans le respect le nature et de l’environnement dans une culture très raisonnée en utilisant majoritairement des produits biologiques.

En priorité, nous achetons des fournitures usagées et nous compostons tout ce qui est utilisés sur la terrasse en en cuverie.

Sur la magnifique terrasse, nous vous offrons des dégustations, des visites ainsi que des plateaux de fromages et charcuteries du Québec.
